I’m a Grandma!
News from my world. Jessica, my oldest daughter, got married in October. (Here’s a picture of Darlin Dan and I) My younger daughter , Amanda, has made me a Grandma! My beautiful Mia is now 3 months old.</p><p>I am now low carbing again and trying new recipes. I will post a couple of recipes real soon that I have tried and would recommend.
Low Carbing again
I have been low carbing again and I’m feeling pretty good. The hardest part for me is to find time to exercise! I’m trying new recipes and digging out some old favorites. I really like fast microwave recipes.
Does this make any sense?
I’ve been pretty discouraged about my extremely slow weight loss. I have been low carbing and seen slim to no results since January-7 lbs. Darlin Dan has lost 14 lbs. I decided to take a week off from low carbing and this week I lost 2.6 lbs! DDan lost 0.2. I ate regular pizza, fried chicken, cereal, chips, apples, and weight watchers entrees for lunch. What’s the deal?
Protein Shake
I’ve started having a protein shake for breakfast. I’m really enjoying these things….very filling when made with glucomannan.
Here’s the basic recipe
1/2 cup almond milk
1/2 cup sugar free Torani Syrup (my fav is coconut)
1 scoop unflavored protein powder
1-2 drops liquid splenda-if needed
1/2 tsp glucomannan powder added after the above has been mixed in blender
keep all of this whirling in the blender and add ice-at least 1-2 cups-keep on blending.
This will become a frozen delight!
I put all of this in a large travel mug and off I go to work.
Just Like Loaded Baked Potato
I had to get some cauliflower cut up and ready to put in the freezer. I bought 3 heads on sale and have had them in the fridge for way too long. After I cut them up, I let them boil for 3 minutes. I fished all the chunks out and let them cool completely. Before I stuck them all in the freezer, I decided to make myself a “Stuffed Baked Potato”. Doesn’t that sound delicious?
Has anyone tried Linda’s recipe for “Just Like Loaded Baked Potato“?

I was checking out my Facebook page this weekend and noticed a 5k walk/run sponsored by the school district a graduated from. The class I graduated with (many, many years ago), had posted it as an event for us to do. I decided that I would do this event. I need some motivation to get out and move! This is it. It is scheduled for March 26. Darlin Dan is hoping he can do it too. (He still has problems with his knee.)
The countdown begins-33 days until the 5k walk/run!
Low Carb Strawberry No Bake Cheesecake!
I made this delicious pie on Saturday afternoon. I wanted to add Glucomannan/X. gum mixture to firm up the filling. I tweaked Linda’s recipe, “Rachel’s Individual Strawberry no bake Cheesecake” recipe! This was made as a whole pie with a combination of sweeteners and the gluc. powder added to firm the filling.
Here’s what I did-
Filling-
4 large fresh strawberries whirled in blender
12 ounces cream cheese, softened
2/3 cup sour cream
3/4 cup granular Splenda or equivalent liquid Splenda
1/4 cup Erythritol (powder)
1/8 tsp. stevia powder
1 teaspoon vanilla
1 1/2-2 tsp glucomannan powder
1/8 tsp X. Gum
Strawberries sliced for garnish
Crust-
1/2 cup ground almonds
1/4 cup ground pecans
1/4 cup ground hazelnuts
2 tablespoons vanilla whey protein powder
2 tablespoons butter, melted
1/16-1/8 teaspoon salt
sprinkle of cinnamon
Blend all of the ingredients in a small bowl and spread in a greased 9″ pie plate to make the pie crust. Sprinkle a little cinnamon on top. Bake at 350º 10-12 minutes or until lightly browned, Watch closely it will brown very quickly. Cool completely before using.
Filling-
Coarsely chop the berries and place them in a blender.
Add everything but the glucomannan and X. gum in a bowl and whip until smooth, adding gluccomannan and X. gum sprinkled in a little at a time.
Chill well before serving.
LC Pina Colada!
Here’s my first post on using Glucomannan powder in a recipe.
I got this idea while driving home from work this afternoon!! I was dreaming of having a Pina Colada! I realized that I could try to make my fav. drink using this powder to thicken it.
When I make a regular Pina Colada, I love to use ice cream and I thought this powder might do the trick.
I can’t believe I made such a fantastic low carb Pina Colada!
Here’s what I did-
1 cup of coconut milk
1/2 cup water
1/4 cup Torani coconut syrup
6 drops of liquid splenda
2 truvia packets
1 scoop unflavored protein powder
1/2 tsp glucomannan powder
1/16 tsp xantham gum
1/2-3/4 tsp of unsweetened Pineapple/orange koolaid
Rum to taste-optional
Lots of ice
I put the liquid ingredients in blender first-gave it a quick whirl
I had combined the protein powder, glucomannan and x. gum in a small bowl first and then added 1/2 to blender at a time. Added the kool aid powder.
Added ice 2 at a time until I was happy with the consistency.
We did add rum and enjoyed every sip of it!
