Low Carb Strawberry No Bake Cheesecake!

I made this delicious pie on Saturday afternoon. I wanted to add Glucomannan/X. gum mixture to firm up the filling. I tweaked Linda’s recipe, “Rachel’s Individual Strawberry no bake Cheesecake” recipe! This was made as a whole pie with a combination of sweeteners and the gluc. powder added to firm the filling.
Here’s what I did-
Filling-
4 large fresh strawberries whirled in blender
12 ounces cream cheese, softened
2/3 cup sour cream
3/4 cup granular Splenda or equivalent liquid Splenda
1/4 cup Erythritol (powder)
1/8 tsp. stevia powder
1 teaspoon vanilla
1 1/2-2 tsp glucomannan powder
1/8 tsp X. Gum
Strawberries sliced for garnish

Crust-
1/2 cup ground almonds
1/4 cup ground pecans
1/4 cup ground hazelnuts
2 tablespoons vanilla whey protein powder
2 tablespoons butter, melted
1/16-1/8 teaspoon salt
sprinkle of cinnamon

Blend all of the ingredients in a small bowl and spread in a greased 9″ pie plate to make the pie crust. Sprinkle a little cinnamon on top. Bake at 350º 10-12 minutes or until lightly browned, Watch closely it will brown very quickly. Cool completely before using.

Filling-
Coarsely chop the berries and place them in a blender.
Add everything but the glucomannan and X. gum in a bowl and whip until smooth, adding gluccomannan and X. gum sprinkled in a little at a time.
Chill well before serving.

Mini Ham & Cheese Omelets

I made some Mini Omelets this morning. I fashioned them after our beloved egg bites. I bought an egg poacher for the microwave last week. I used that to cook the mini omelets in the microwave!

Mini Ham & Chees Omelets
1/4 cup chopped ham
1/4 cup chopped onion
1/4 cup chopped tomato
1/4 teaspoon italian seasoning
1 teaspoon of butter
4 eggs
1 cup cheddar cheese
Saute onions in butter till golden. Add chopped ham and saute another minute more. Set aside to cool.
Mix all ingredients together and about 1/2 cup of cheese. Be sure veggies and ham mixture has cooled slightly before adding to egg mixture. Spoon into container and cook in microwave about 1 min 10 seconds.
Flip out of container and sprinkle some cheese on top. I got 14 min omelets.

Mini Cheesecakes

These are delicious! I made my recipe posted HERE.

I did change the crust recipe a bit. I used 1/4 cup almond meal, 1/4 cup pecan meal, 1/4 cup ground hazelnuts, 1/4 cup vanilla protein powder, 3 tbsp butter, melted, 1/4 tsp cinnamon.
In a bowl mix the nuts, protein powder, cinnamon, and melted butter. Stir to completely combine. Line a cupcake pan with cupcake liners. Press the crust mixture down into the liners and bake for 5 minutes in 350 degree oven. Remove to cool.
I also made some strawberry sauce………..but we ate it all!!

1 cup strawberries sliced & some extra to add at the end
2 tbsps water
5-6 tbsp xylitol
1 tsp guar gum (or other thickener)

In saucepan, mash 1 cup of sliced berries using a potato masher. Add water, thickener and xylitol. Bring to a light boil, stirring occasionally. Let boil for a minute or until mixture begins to thicken. Add remaining sliced berries and stir.

One Minute Muffins

I made us some yummy OMMs to have with our coffee.  I got the recipe on low carb friends forum.

Here’s what I did…

1/4 cup  of a combo of almond meal and Flax Meal
1/2 teaspoon Baking Powder
2 packets Splenda
1 teaspoon Cinnamon
1 Egg
2 teaspoons Butter(I used coconut oil)

Mix the dry ingredients in a large coffe cup. Add egg and butter; mix well. Microwave for 50-seconds to 1-minute. Muffin pops right out.
For 1 of the muffins I subbed 1 tbsp cocoa for the cinnamon.

Scoopable

OMG! This LC ICE CREAM is scoopable after 24 hours. It is creamy and has a wonderful flavor…………..Darlin Dan says no need to buy ice cream from the grocery store anymore. Now that’s a compliment.

Great LC ICE CREAM

 This LC Ice Cream is seriously good. Darlin Dan said it was better than store bought. It was scoopable after 6 hours. I will check it again in the morning. I got the recipe from Low Carb friends. I really love this ice cream!  It is very creamy.

Yummy pickles

Look at these pickles-well I guess they are not actually pickles yet, but they will be in 3 days!

I saw this recipe on Low Carb Friends and just had to try it. (CLick on link and you will see the recipe)

It is super simple.

Linda has put the recipe on her site for a smaller quantity. I used that recipe because I had 2 cucumbers.

Chicken Lazone

Chicken Lazone- This is seriously delicious! This recipe was posted on Low Carb Friends by Gina. I made it tonight for dinner.  We just love it. It is super easy. The sauce is to die for.

SERVES 4 (change servings and units)

 
Ingredients
1 teaspoon salt
1 1/2 teaspoons chili powder
1 1/2 teaspoons onion powder
2 teaspoons garlic powder
4 whole boneless skinless chicken breasts
1/4 cup butter, divided
1/2 cup heavy cream

Directions

Combine the seasonings and coat chicken breasts.
In large saute pan melt half of the butter and cook chicken over medium heat for about 7 to 8 minutes, turning once.
Pour the cream into the skillet and lower the heat.
Simmer for several minutes, stirring until the sauce thickens then add the remaining butter.
When butter is melted place chicken breasts on four plates and top with the sauce.

Divine Cheesecake

This cheesecake is sooooo good. The crust came out great. I love the blueberry sauce. Darlin Dan likes strawberry sauce better, but still ate his entire piece! I will post recipe later.
