Im Stuck in a rut…Darlin Dan is my HERO

Well, I’m stuck-not losing any weight-but my DARLIN DAN has lost another 2 pounds!!!!! He is trying sooooo hard! I’m soooo proud of him-he’s lost 19 pounds and his pants are starting to fall off him! He’s working out every day on the Wii…I wish I could say the same thing, but when I get home, I’m getting dinner on the table. I’m trying to plan better and I’m making a monthly menu. I hasven’t been 100% successful with this, but it has helped. I intend to prepare some meals ahead of time this week.

Chicken Posole

I made some delicious Chicken Posole for poker night. I’ve been very interested in hominy ever since I read that Juanita’s mexican style hominy has less carbs than other hominy. With the help of Darlin Dan, I found the perfect recipe. The first time I tried to make Posole, I made it with tomato sauce……………big mistake! Darlin took me to taste menudo and told me that Chicken Posole tastes just like that.
Here’s the recipe–
INGREDIENTS
  • 2 1/2 pounds chicken 
  • 4 tablespoons vegetable oil, divided
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 1/2 quarts chicken broth
  • 3 cups water
  • 1 teaspoon crumbled dried oregano
  • 2 teaspoons salt
  • 4 tablespoons chili powder, or to taste
  • 3 cups white hominy, rinsed and drained

  DIRECTIONS

  1. Heat 2 tablespoons canola oil in a deep skillet over medium-high heat. Add chicken, and cook until no longer pink and juices run clear, about 20 minutes. Remove from skillet, drain, and cool. When completely cooled, shred chicken with a fork.
  2. Heat remaining 2 tablespoons canola oil in the same skillet over medium-high heat. Cook and stir onion and garlic until soft and transparent, about 5 minutes. Return shredded chicken to the skillet. Stir in the chicken broth, water, oregano, salt, and chili powder. Reduce heat to low, cover, and cook about 90 minutes. Stir in the hominy and cook until tender, about 15 minutes more. Taste to adjust seasonings, adding more salt and chili powder, if desired.

Serve with chopped onion and lemon.

Chicken Spaghetti made with Dreamfields Pasta

We   had some good lower carb chicken spaghetti tonight. Very simple and yummy.
 Chicken Spaghetti:

1. Cook 1 pkg Dreamfield spaghetti pieces until al dente.

2. When spaghetti is cooked, combine in a large bowl with the following:

1 can Cream of Mushroom Soup

1 can Cream of Chicken Soup
2 cups chicken
2 cups of the cheddar (reserve 1 cup)
1/2  green pepper chopped
1/2  onion chopped
1 tsp. seasoned salt
Salt & pepper to taste

3. Put the mixture into 2 greased 2-quart casserole dish.  Sprinkle with cheese, bake at 350 for 45 minutes. Cover if cheese is over-browning

Spring Break is over

Wow….Spring Break is over and it’s back to work. Danny has lost 15 lbs! I’ve lost 8.
We’re enjoying our Wii. Danny loves to play tennis on it.
I dropped my cell phone in the toilet yesterday afternoon. What a klutz.  I figured out how to transfer my phone number to Danny’s old phone…..over the internet! How high tech is that?

Revisiting Empanadas

I made some pumpkin empanadas! I used my recipe that I’ve posted before and they came out soooo good!
