Miss ya Dad! I’ve tried to stay busy today and not think about what day it is. It’s hard-5 years ago today, my Dad left this world. I miss him so.

Revisiting the Cinnamon Roll

I warmed up one of the leftover cinnamon rolls from yesterday, and I have to say it was delicious! I put my leftover rolls in a plastic baggy and put them in the fridge. This morning, I took one with me to work and warmed it up on a paper towel in the microwave for 20 seconds and loved it.

Sunday Sugar Free Sweet!

For our LC sweet this weekend, I made some cinnamon rolls. This recipe was posted by SkeeterN on the Low carb friends forum here. She tweeked a recipe for a Cheese Danish. I tweeked it just a bit-I used a combo of almond flour and golden flaxseed meal. I topped them with chopped pecans and I used the cream cheese topping posted here. Don’t ask me why I didn’t just make the regular sweet topping. I think it would be just as good. Next time, I will include some liquid(1-2 tbsp. of liquid-cream or low crb milk). Not too sure of the carb counts.

By the way, Darlin Dan was very impressed with this cinnamon roll. (He ate 2!)

Low Carb shopping at H.E.B.

We went to HEB this morning to pick up some low carb essentials. Mootopia milk is only 6 carbs per cup. Sorry my picture is so bad. I snapped it in such a hurry.

Low Carb Cereal or Cracker Mix

Here’s some tasty low carb cold cereal. Easy as pie to make. Thanks to Ginny’s Low Carb Kitchen.
She has a you tube video that really helps in making this even easier to make. Darlin Dan gave this recipe 2 thumbs up. He watched me make the recipe and was his usual skeptical self. He was pleasantly surprised at the taste and texture!

LC Pancake Puffs

Darlin Dan and I love to have a little something special with our weekend morning coffee. I made these LC pancake puffs posted on Ginny’s Low Carb Kitchen. She also has a you tube video on how to make these.

Hot Cereal

Low carb friends posted a low carb hot cereal recipe that was very satisfying this morning.
I tried 1/6 of the original recipe-
Here’s what I did for 2 serving
1/2 cup wheat bran
1/3 cup flax meal
1 scoop vanilla protein powder
mixed that all together in a container

I warmed 1/2 cup of low carb milk in microwave and then added that to 1/2 cup of the above mixture.
I added a little butter, cinnamon, and sweetener. (Splenda and a little brown sugar splenda)
Mixed it up real good.
Darlin Dan took a small taste and said it would taste very good with a little fruit mixed in.
We will be experimenting with this!
