Chicken Salad

I made some great chicken salad…………made with frozen spinach & dry vegetable soup mix. I subbed jicama for the water chestnuts.
Here’s the recipe……
1 pkg frozen chopped spinach, drained and squeezed dry
1 pkg Knorr’s vegetable soup mix
1/2 cup sour cream
1 cup mayonnaise
1/4 cup chopped jicama
2 cooked chicken breasts-deboned and choppped
2-3 chopped green onions

 

Mix the sour cream and mayonnaise together in a bowl. Pour in the soup mix, chopped chicken breast, jicama,green onion, and spinach. Mix thoroughly and refrigerate for at least four hours. Stir before serving.

Crockpot Applesauce Chicken

I made this crockpot dish for our gals beading night. I was a little disappointed in the end result, but Darlin Dan and Jessica liked it. The Gonzalez’ open a Barbacoa Restaurant

Al and Sophia Gonzalez opened their Barbacoa place this weekend. In South Texas, Barbacoa is a very popular weekend Breakfast treat. Barbacoa places are typically open only on the weekends, Saturday and Sunday.  Sophie is Danny’s niece. Al and Sophie both work in the school district. Al’s parents have a Barbacoa place in Corpus Christi, Texas.
I picked up some of their pork rinds (actually they gave me some)GOOD LUCK GUYS!!

Shelly’s Banana Quesadillas

Shelly at http://theworldaccordingtoeggface.blogspot.com/ has a recipe for Banana Quesadillas. I made the filling last night. It is really tasty. I’m trying how to make this lower carb. I want to get some banana flavored sf syrup.  I wonder how this filling would taste in an empanada……………….

4th review-South Beach Living Grlled chicken Caesar Wrap

I decided to try a wrap sandwich kit by South Beach living–weighing in at 8 net carbs for 2 wraps.  At first glance, the tortillas look pretty small-but it was satisifying.  There was plenty of chicken.

3rd review: Lean Cuisine Steak tips portabello

Here’s another installment to my reviews of lower carb frozen meals. This one is Lean Cuisine’s Steak tips portabello.  The stats are 180 calories, 10 net carbs, for this 7.5 oz meal. It consists of beef rib tips & portabello mushrooms in a burgundy wine sauce with broccoli. The sauce is yummy!!  I ate this with a baby spinach salad.
 
Fiesta Week is starting on Friday. I’m gonna try to comment on a fiesta event every day during fiesta and I will also try to include a lower carb recipe that could be made in honor of fiesta. Viva Fiesta!!

IT”S FRIDAY-TIME FOR SANGRIA MADE WITH TRUE LEMON AND LIME

I Sangria!
Time for another of JK’s experiments that include some kind of liquor and true lemon &/or lime. This week it is a Sangria concoction.I just used what I had on hand.Next time I would use some sparkling water and some sliced lemon/lime for added color.
2 cups red wine 
3 cups water
1 true lime packet
1 true lemon packet
1/2 of 1 Splenda quik pack
1 packet of SF fruit punch (like crystal light)
Mix all together in a pitcher-Chill and serve over ice.
 I will work on this one–ISANGRIA!!!

2nd review Smart Ones Sirloin Beef & Asian Style Vegetables

Another review of a lower carb frozen meal from my list.
This one is a Weight Watchers Smart Ones-Sirloin Beef & Asian Style Vegetables. This meal is 160 calories and 13 carbs-3 fiber, for a total of 10 net carbs.  The net wt. is 9 oz.  This meal is tasty. It contains some sirloin beef, sugar snap peas, mushrooms, bell peppers, bean sprouts and water chestnuts in a zesty teriyaki sauce. It hits the oriental food spot!! I ate it with a side salad. I would eat this again–the sauce was flavorful.

Brownie Bites Revisited

I made another batch of Brownie Bites.  This time I used flaxseed meal in place of oatmeal. I subbed almond slivers for the chopped nuts and I used instant coffee for the expresso powder.  Oh, and I used SF Hazelnut Syrup.  I did use the sf Reese’s peanut butter cups this time.  I’m enjoying these yummy morsels every morning.  I store them in the fridge and take a couple for the ride to work. I think they taste better today than yesterday–is this psychological??

MY VERSION OF “COOKIES & CREAM” ICE CREAM (CARB SMART)

I ice cream…….it is my addiction.
We went to Walmart yesterday and We discovered SF oreos—hadn’t seen them before.
 
and   equals
 
We had some "cookies and cream" carb smart ice cream last night!! We picked up some Vanilla carb smart ice cream and added a crushed sf oreo cookie!!!!!! I mixed it up like they do at Marble Slab or Cold Stone–wow-that was quite a treat.
