Linda’s Mexican Chicken
I made Linda’s Mexican Chicken tonight for supper. Delicious! Easy! 2 thumbs up!
I also made faux spanish rice out of hominy………..I was very pleased. I used Linda’s recipe for mexican rice. She uses caulflower in place of rice. I just put 1 cup of hominy in my food processer and pulsed it until it looked like rice.
Robin’s Rotel Dish
I got a great recipe here on Low carb friends. It’s very simple, just 2 1/1 lbs. ground beef, 1/2 lb. breakfast sausage, rotel tomatoes, and 8 oz. block of cream cheese. I was curious after reading posts about how good this recipe is. I don’t usually like cream cheese in things (except cheesecake), so I was so pleasantly surprised. Will be making this one again and again. Darlin Dan ate it with pork rinds, like a dip.
Delicious Chicken Enchilada Soup
I made some delicious soup tonight -and it’s 10 carbs a serving! This chicken enchilada soup was recently posted on the Hungry Girl Site. It sounded so good I had to try it. It has a surprise ingredient- canned pumpkin!
Day 1
Ddarlin Dan and I are back from our cruise. We decided to get back to low carb since we are getting out of control. I started our day with making some low carb bread in the bread maker. It’s delish. I got the recipe from low carb friends. This recipe is a Jen Eloff creation. I’m lovin it! I have another batch in the bread maker right now.
