Shopping at Tim’s

Darlin Dan and I took a field trip to Tim’s.
Here’s what I got

I grabbed some coconut milk, baby corn and……………

Shiratake noodles!! They only cost $1.29!
These do not have tofu!
I only got 1 bag because I want to see if I like them first. Tim’s is very close to the house.

LC Pina Colada!

Here’s my first post on using Glucomannan powder in a recipe.
I got this idea while driving home from work this afternoon!! I was dreaming of having a Pina Colada! I realized that I could try to make my fav. drink using this powder to thicken it.
When I make a regular Pina Colada, I love to use ice cream and I thought this powder might do the trick.

I can’t believe I made such a fantastic low carb Pina Colada!
Here’s what I did-
1 cup of coconut milk
1/2 cup water
1/4 cup Torani coconut syrup
6 drops of liquid splenda
2 truvia packets
1 scoop unflavored protein powder
1/2 tsp glucomannan powder
1/16 tsp xantham gum
1/2-3/4 tsp of unsweetened Pineapple/orange koolaid
Rum to taste-optional
Lots of ice
I put the liquid ingredients in blender first-gave it a quick whirl
I had combined the protein powder, glucomannan and x. gum in a small bowl first and then added 1/2 to blender at a time. Added the kool aid powder.
Added ice 2 at a time until I was happy with the consistency.
We did add rum and enjoyed every sip of it!

Jessica’s Birthday

My oldest daughter is having a birthday on Valentines Day and wanted to celebrate on Friday night! We had dinner at a Moroccan Restaurant.
Here’s what I had-Chicken with vegetables-

Jessica decided to go somewhere different and special for her birthday. I had never eaten this type of food before. I didn’t really know what to expect.
We had a wonderful time. The atmosphere was great! We sat in a special little area with sofas and pillows. We drank some yummy hot tea (sweetened with real sugar). My favorite dishes were the lentils and hummus.

Mini Ham & Cheese Omelets

I made some Mini Omelets this morning. I fashioned them after our beloved egg bites. I bought an egg poacher for the microwave last week. I used that to cook the mini omelets in the microwave!

Mini Ham & Chees Omelets
1/4 cup chopped ham
1/4 cup chopped onion
1/4 cup chopped tomato
1/4 teaspoon italian seasoning
1 teaspoon of butter
4 eggs
1 cup cheddar cheese
Saute onions in butter till golden. Add chopped ham and saute another minute more. Set aside to cool.
Mix all ingredients together and about 1/2 cup of cheese. Be sure veggies and ham mixture has cooled slightly before adding to egg mixture. Spoon into container and cook in microwave about 1 min 10 seconds.
Flip out of container and sprinkle some cheese on top. I got 14 min omelets.

Mini Cheesecakes

These are delicious! I made my recipe posted HERE.

I did change the crust recipe a bit. I used 1/4 cup almond meal, 1/4 cup pecan meal, 1/4 cup ground hazelnuts, 1/4 cup vanilla protein powder, 3 tbsp butter, melted, 1/4 tsp cinnamon.
In a bowl mix the nuts, protein powder, cinnamon, and melted butter. Stir to completely combine. Line a cupcake pan with cupcake liners. Press the crust mixture down into the liners and bake for 5 minutes in 350 degree oven. Remove to cool.
I also made some strawberry sauce………..but we ate it all!!

1 cup strawberries sliced & some extra to add at the end
2 tbsps water
5-6 tbsp xylitol
1 tsp guar gum (or other thickener)

In saucepan, mash 1 cup of sliced berries using a potato masher. Add water, thickener and xylitol. Bring to a light boil, stirring occasionally. Let boil for a minute or until mixture begins to thicken. Add remaining sliced berries and stir.
