Experimenting with Hominy

When I read that Juanita’s Mexican style Hominy was lower carb, I got very curious and wanted to do some experimenting. Last night, I made a hominy mash. Darlin Dan did not care for it, but I liked it, especially with chicken gravy on top! I guess you could compare it to the mashed cauliflower that we LCers make from time to time.
