Tomato & Pesto Chcken

I made this recipe a couple of weeks ago. It is really yummy. I found the recipe at
I changed it just a little bit. The original called for sun dried tomatoes. There’s a pretty picture of the finished product on her blog.
Creamy Pesto &  Tomato Chicken-1 serving
4 oz Chicken Breast
1 oz Cream Cheese
2 tbsp Pesto Sauce
1 tbsp oven roasted Tomatoes
1 tbsp Parmesan Cheese

Mix cream cheese, 1 tbsp pesto, and  tomatoes together in small bowl.  Butterfly Chicken (cut in middle to make a pocket).  Stuff chicken with cheese mixture. Press to close.  Put remaining tbsp of pesto over chicken. Cook at 425* for 25-30 minutes (or until done).  You can also sprinkle a little parmesan on top.
